All you need to know about mexican food.

Mexican food has influence of many places, including international cuisines. Its essential ingredients are: corn, chilli, onion, tomato, among other ingredients, depending on geographic region or State, mexican food also includes meat and dairy products.

We must know that mexican food is different in every State of the Mexican Republic, even the same dish, for example, pozole from Guerrero State, is different than pozole from Michoacán State, etc. Another important point is that Mexicans are accustomed to eat food with a hot sauce, if you are a foreigner, before enjoying one of these dishes, first asks how much chilli has the food you're about to eat, if they say it hasn't to much, just try a bit to find out if it's okay for you, if the dish is very hot, you should think twice before trying it.

Also within the same dish may have different variants, using the same example of pozole, pozole can be green, white, redcamahua (black), elopozole, etc. Another factor that may influence Mexican food is the place where you are, if you are in the coast for example, it is certain that include seafood.

There are somehow dishes that are original from a region, such as Chiles en Nogada, own from Puebla, as the Mole Poblano also. The cabrito al pastor, own from Monterrey city in Nuevo Leon, amoung others dishes.
